Why have the skins on some of my potato tubers turned green?

Our Advice:

Green colouring on potato skins is usually due to the tubers being exposed to light, either during growing or while they are stored. The tuber can adapt so that the exposed area starts working like a leaf. Providing you peel the potatoes and remove the green areas, the tubers are safe to eat.
