From your description it sounds like your cauliflowers have an attack of powdery mildew. Try spraying them with SB Plant invigourator + 5 grams of baking powder per litre at weekly intervals to control this problem. Also stop covering the plants at night, as this should increase the airflow and help to reduce infection.
